I cannot live without pickles, I love all kinda pickles whether it is sweet or spicyyyy. No matter the weather, summer or winter I always have a big jar of pickles on my kitchen counter. I love to try variety of pickles.
Here is an instant version of Granny Smith apple or Green apple. The sinful items in Indian style pickles are according to me, the abundance of oil and salt. This instant kinda pickle is not that sinful. It uses very little oil and does not salt as preservative.
It hardly takes 10 minutes to prepare this pickle and lasts for about a week in an air tight container in the refrigerator. The juicy apples loaded with the correct proportion of spices makes it an interesting substitute for raw mangoes.
The bright red colour with seasoning of spices makes it so eye pleasing and I’m tempted to have it each time I pass by the jar😁. It’s a great idea for parties too and your guests will be fooled into thinking it is made of mangoes😄.

- 1 big green apple
- 1 and 1/2 tsp oil
- 1 tsp mustard seeds
- 1/4 tsp asafoetida
- 1/4 turmeric powder
- Few fresh curry leaves
- 1 and 1/2 tsp red chilli powder
- 1/2 tsp rasam powder
- A big pinch of fenugreek powder
Wash, core and chop the apple into small bits. Keep aside. Heat oil, temper mustard seeds and add asafoetida, turmeric powder and curry leaves. Saute for 10 seconds on low flame. Then switch off the flame.
Now add chopped apple, red chilli powder, rasam powder, fenugreek powder and salt. Mix well to coat each piece. Let it sit for 1 hour. Then store in an air tight container in the refrigerator.
Goes well with plain rice, curd rice or even with roti.

Keep in mind that this pickle does not have a great shelf life, just store it in refrigerator and enjoy for a week.
Use sour apples or if the apples are not sour enough, add a tsp of lemon juice.
Adjust spices to suit your taste.
