Hot Fudge Chocolate Pudding Cake

Ooey goey Hot Fudge Chocolate Pudding Cake with a thick layer of hot fudge underneath a layer of moist chocolate cake. The perfect base for a hot fudge sundae. To me there is nothing better than hot fudge, especially hidden underneath a layer of a rich chocolate cake. This hot fudge pudding cake is the perfect addition to icecream and makes a pretty awesome sundae.

This pudding cake is outrageously good with moist cake with a warm and fudgy pudding center plus a sweet crunchy topping.

The cake batter goes on the bottom and brown sugar + cocoa powder gets sprinkled on top. Next you pour the hot water over the batter. That’s it. Make sure not to stir the hot water after it is added. Leaving it rest on the top makes the layer of thick fudge.

It looks like a child’s experiment gone wrong at this point, but then as the batter bakes, the cake rises to the top, magically switches places with sugar-cocoa-water puddle and develops an irresistible bottom of thick chocolate sauce.

The chocolate flavour is spot-on and the combo of cake with cream fudge is perfection. It’s basically a dream-come-true dessert.

Makes 4 to 5 servings

Ingredients :

Cake batter :

  • 1 cup all-purpose-flour
  • 1/2 cup white granulated sugar
  • 1/4 cup cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract

Fudge Sauce :

  • 1/2 cup white granulated sugar
  • 1/2 cup raw brown sugar
  • 3 tbsp cocoa powder

Other ingredients :

  • 1 and 1/4 cup boiling water

Instructions :

1. Preheat the oven. Lightly grease the baking pan. Pre boil water in a vessel while preparing cake.

For the cake :

1. Combine all the ‘cake batter’ ingredients in a bowl and whisk until smooth and fairly lump free.

For the sauce :

2. Combine the ‘fudge sauce’ ingredients in a bowl.

Assembling and baking :

3. Pour cake batter in the greased baking pan or dish and spread evenly. Then sprinkle the fudge sauce mixture over the batter evenly. Slowly pour the boiling water over the top (DO NOT STIR OR MIX THE BATTER, JUST ALLOW THE WATER TO SIT ON TOP).

4. Bake for 25 to 30 minutes or until the center is almost set. Remove from oven. Allow to cool for 15 minutes.

5. Serve in dessert dishes with icecream or whipped cream and spoon fudge sauce from the bottom of pan over the top of each serve of cake.

Notes :

This is ooey goey dessert, make sure to spoon the fudgy sauce from the bottom of the pan over the top of the cake while serving in bowls.

Baking time may be slightly vary as every oven is different. So keep an eye after 20 minutes of baking.
