Mixed Lentil Laddus

Here kicks off another week ! Weekends often remind me of the skipped meals to our infrequent food consumption through out the day. Either caught up in busy meetings or wrapping up communications over emails or phone calls, eating right takes a back seat ! Your mind would let you grab innumerable cups of coffee, tea or sometimes even a shot of alcohol too. But does that help ? I am sure you know the answer. It’s a ‘NO’.

Amidst the hola-pola of busy schedules, what can we do to keep our energy levels and take care of our health ? Isn’t it handy to have something in your bag to endure hungerpangs during the busy weekdays ? No ! I don’t get the idea of chocolate or the touted energy bars. How about some homemade fudge balls aka laddus made out of lentils.

We Indians love laddus so much that now this simple dessert has at least one sibling in every region of the country. In other words everyone has not only adapted these laddus but also personalized with own flavours. Being lentils, these are protein packed, with ghee full of good fats and sugar fulfills your carb requirement.

But before we begin let’s keep in mind few things which are completely applicable for any lentil laddus.

  • Roasting lentils is the base of this recipe. So don’t be impatient. A little rush can make the whole thing fall apart.
  • Don’t add the entire ghee at a time to the lentil’s flour mixture.

Let’s have a look at the easy-to-make recipe.

Yields : 22 laddus


Ingredients :

  • 1/4 cup whole black gram/urad Dal
  • 1/4 cup split yellow Moong Dal
  • 1/4 cup whole green gram
  • 1/4 cup oats
  • 1/4 cup flaxseeds
  • 1/2 cup powdered dry coconut or dessicated coconut
  • 2 tbsp dried rose petals
  • 2 tbsp chia seeds (optional)
  • 1 cup powdered sugar or powdered jaggery
  • 1 tbsp roasted poppy seeds
  • 1/4 cup ghee and a little more required
  • 1 tbsp of broken cashews
  • 1 tbsp of broken pistachios
  • 1 tbsp of broken almonds

Method :

1. Dry roast each dal, oats, flaxseeds separately, till you smell the nice aroma of the lentils or until the colour is changed slightly darker. Make sure to roast on medium-low flame. Transfer to a plate and let them cool completely. Then add rose petals and chia seeds to it.

2. Now grind altogether to a very fine powder.

3. Then add powdered dry coconut, powdered sugar and roasted poppy seeds. Mix well.

4. Roast the nuts in ghee and let it cool a bit.

5. Add this ghee little by little to the flour mixture and start making laddus.

6. If laddus are not holding shape, add a little more melted ghee and make laddus.

7. And that’s it ! SEE how simple these are to make ! Make new batches and stash them in an air tight container to keep them fresh. It’s a crowd pleaser — from children to adults.


Notes :

I have used organic cane sugar but you can also use powdered jaggery too.

Adjust the sweetness according to your taste.

Use dry fruits of your choice, there are no rules and regulations. Use any flavours, you want, like cardomom and nutmeg.

Only one thing needs to keep in mind while preparing laddus that is roasting the dals. It needs to be done properly otherwise unroasted dals give raw taste to the final dish.

It is not recommended to add all the ghee in one go.
