Fried food is something that we all enjoy with an added guilty pleasure to it. Do we like it ? Well, we love to gorge on to deep fried crispy snacks, although we hate to admit it because of overly hyped clean eating and healthy lifestyle movements happening around us. Nowadays, for most of us, counting calories and discussing weight loss has become second nature and avoiding oily or high-calorie food has become our natural response.
The good news is that healthy deep-fried is not as bad as it is considered. One way of explaining this is to know how frying really works. The consumption of fried foods in moderation and in right manner can help you build your immunity during monsoon/winter season, where the chances of immunity drop are higher due to lack of enough calorie intake or outdoor physical activities.
Keep in mind that we are not talking about the fast-food fried foods which are the root cause of people rejecting the term fried food itself😃. Such a meal contains an entire day’s worth of calories and sodium, with the added effect of re-used oil making that food complete garbage.
In short, it is not a question of will power as the weight loss industry makes you believe, it is about the getting the right knowledge and then making the wise choices when it comes to food😊.
Now I am sharing a healthy deep-fried snack recipe with lot of greens ie Thotakura Pakoras aka Amaranth Greens’ Fritters… Amaranth has been used in cuisine since centuries because of its nutritional value and today many of them have developed liking towards this leafy veggie as it is packed with protein.
The addition of nuts give a nice crunch and the poppy seeds highlight the texture of pakoras. This is very easy-to-make dish and makes a wonderful tea-time snack.

Serves : 4 persons
- 1 cup tightly packed amaranth greens, chopped finely
- 1/4 cup fresh curry leaves, chopped
- 2 onions, chopped lengthwise
- 10 green chillies, chopped finely
- 1 cup Besan/gram flour/chickpea flour
- 1 cup yellow corn flour
- 1/4 cup almonds, chopped into pieces
- 1/4 cup roasted peanuts, make into pieces
- 1 tbsp poppy seeds
- A pinch of cooking soda
- 1/2 cup curd
- 1/4 cup water or little more to make thick batter
1. Heat the oil for deep frying on medium-high heat.
2. While the oil is heating up, mix all the above said ingredients in a bowl and make into a thick batter.
3. When the oil is hot, take small portions of the batter and drop gently in the oil and deep fry until crispy or golden brown in colour. Remove the Pakoras on a paper towel to drain any excess oil and place on a serving platter.
4. You can also make ball-shaped pakoras and deep fry.
5. Serve the Pakoras plain or with any dip of your choice.

Add enough water and make sure the batter is thick.
Avoid curd if you are a vegan and add water instead.
