Kulfi is undoubtedly India’s best sweet dessert on a stick. This classic, creamy and traditional icecream is centuries old and absolutely a culinary gem among Indian dessert recipes.
The traditional method of making kulfis requires sometime and attention. In that you need to reduce the milk slowly on stove top and khoya(milk solids) or condensed milk is added for more richness. There is no right or wrong way to prepare this summer treat. And as for flavour, there are no limitations either.
With summer in full swing, instant kulfis sound like a perfect happiness to the belly. One doesn’t really feel like spending hours in the kitchen to make these treats. Kulfi is every Indian guilty pleasure.
The kulfi recipes that i am sharing with you today are an instant version, can be prepared in minutes and can be relished during summer and of course on beautiful rainy days too. Some times, you need this kind of recipes in your life, especially standing by the stove for long hours is not your thing. These just need a quick blend and then freeze to set.
I have used vanilla icecream as the base as it gives a creamy and rich taste to the kulfis. There will be no formation of ice crystals due to the usage of vanilla icecream. I didn’t use any sugar in paan kulfi since the vanilla icecream is rich and sweet enough. These kulfis have everything that you are looking from a perfect kulfi recipe….right amount of sweetness, richness and flavour.
Nothing beats the way, kulfi is made traditionally but this is the decent substitute with the calorie rich vanilla icecream. So what are you waiting for ? Try this kulfi recipes for this summer and enjoyyy.
PAAN GULKAND KULFI
Yields : 3 kulfis
- 1 cup melted vanilla Icecream
- 1 tbsp coarse paste of paan leaves (around 6 leaves)
- 1 tbsp gulkand (rose petal jam)
Take the above said ingredients in a bowl and whisk well till incorporated. Then pour in kulfi moulds or any popsicle moulds or even tiny glasses and allow them to freeze completely for 6 to 8 hours or till frozen or set. To demould, place the kulfi moulds under running water for some seconds or rub them between your palms. With a butter knife gently remove the kulfi and enjoy.
MOCHA KULFI (coffee flavoured)
Yields : 3 kulfis
- 1 cup melted vanilla icecream
- 2 tbsp bread crumbs
- 1/2 tsp vanilla extract
- 1 tsp instant coffee powder or as per your taste
- 2 tsp powdered sugar or as required
Just whisk the above said ingredients well in a bowl, pour in moulds and freeze for 6 to 8 hours. Then demould and enjoy.
I have used bread crumbs in mocha kulfi recipe to resemble the chew and bite of khoya, the result is superb.
You can add sugar if you want it to be more sweetish. But it’s purely optional.
Don’t use coloured gulkand for paan kulfis, otherwise they won’t turn green.
The above mentioned measurment in both recipes yields three kulfis.
You can also add any dry fruits of your choice.
